Recipe: No Crust Coconut Pie

Well – there are a few things in this old world I will not eat and coconut is one of them. However, my husband like coconut pie. LOVES it is more like it. So, to make it easy on myself when making a dish I don’t like, I make this pie. Quick and easy coconut pie. I’m out of the kitchen in a hurry and he’s a man with a happy tummy.

No Crust Coconut Pie

2 cups milk
3/4 cup sugar
1/2 cup biscuit mix
4 eggs
1/4 cup butter
1 1/2 teaspoon banilla
1 cup flaked coconut

Combine milk, sugar, biscuit mix, eggs, butter and vanilla in electric blender container. Blend on low speed for 3 minutes. Pour into a greased 9 inch pie pan. Let stand 5 minutes. Then, sprinkle with coconut. Bake at 350 degrees for 40 minutes.

    You should make Tim & me some coconut macaroons. With a ton of real dairy butter. Yep, if you did that we’d probably both love you forever. 😉
