Recipe: Burrito Casserole

This recipe appears in our family cook book in the ‘Quick and Easy’ section.  You know.  The sort of recipe where you can throw it together in about 5 minutes, make a salad and call it dinner.   So – when you’re pressed for time, but you don’t want to take the family out to eat.   Try one of the ‘Quick and Easy’ recipes.  No one will complain.  I promise.

Burrito Casserole – Quick and Easy

6 frozen burritos (whatever combo you like, all meat, meat/cheese, bean. Whatever.)
1 large can chili without beans
1/2 cup water
grated cheddar cheese
chopped black olives
chopped green onions
chopped lettuce and tomatoes
sour cream and guacamole

Place burritos side by side in a lightly greased baking dish.  Cover with chili and pour water over all.  Spread grated cheese over top.  Bake at 350 degrees until heated through and bubbly.  Serve with the other ingredients on the side.

    Try this with a big can of Stokes Green Chili with pork and omit the water – goodness it’s soooo good!!! And a real hit at parties! We got the recipe from a lady at church who was a little embarrassed at how simple it was to make – but we love it!!!
