Recipe: Easy-Schmeezy Twice Baked Potatoes

Carb lovers unite! This will fulfil any carb craving you may have. Cheese, hot, melty, buttery, twice baked potatoes.

Mimi’s Twice Baked Potatoes

4 large baking potatoes
1/2 pint whipping cream
1 stick butter
salt and pepper to taste
grated cheddar cheese

Bake potatoes at 400 until done. Cut in half and scoop out to form a shell. Mix hot potato pulp with butter, salt, pepper and cream to the consistency of mashed potatoes. Stuff into the potato shells and sprinkle with grated cheese (sometimes I add cooked bacon bits). Bake in hot oven to melt cheese.
