Recipe: Strawberry Jam Cake

My mother got this recipe from a co-worker back in 1979 at their annual Christmas party.

So, I thought it appropriate to share it with you today.

Strawberry Jam Cake

1 cup chopped pecans
1 cup chopped dates
1 cup melted butter
1 cup buttermilk
1 cup strawberry preserves
2 cups sugar
3 cups flour
3 eggs
1 teaspoon baking soda
1 teaspoon allspice

Mix all ingredients thoroughly.  Bake in 3 greased and sugared 9″ cake pans at 325 degrees until done. (toothpick comes out clean).  Cool completely before frosting.

Frosting:

1 1/2 cups whipping cream
2 cups sugar
3/4 cup chopped pecans
1 cup chopped dates
1/2 cup butter
1/2 cup candied cherries

Mix all ingredients and cook in heavy saucepan being very careful not to scorch.  Let cook until thick enough for spreading.  Stir often.  Punch small holes with toothpick in top and side of cake before frosting.  Spread between layers and top and sides of cake.  (This cake is listed as VERY RICH.)

    Mmmmm…this sounds yummy! Great photos of KS City — 20 below??? You’ve got to be kidding! Our high today was 68 degrees with warmer temps on the way before the cold returns in time for Christmas.
