Recipe: Easy Pumpkin Bread

This recipe is made with Bisquick, just like Mimi’s Banana Nut Bread Recipe. Easy, Easy, Easy! Another great homemade gift for family, friend, neighbors, the boss, pastor or yourself.

1/3 cup vegetable oil
1 cup canned pumpkin
3 eggs
1 1/4 cups sugar
2 1/3 cups Bisquick baking mix
1 teaspoon ground cinnamon
1/2 cup raisins
1/2 cups pecans, chopped

Heat oven to 350 degrees. Generously grease bottom of a 9 x 5 x 3 loaf pan. Mix all ingredients except raisins and nuts. Beat vigorously for one minutes. Stir in raisins and nuts. Bake for 45 to 55 minutes or until wooden toothpick inserted near center comes out clean. Cool in pan for 5 minutes. Run knife around sides of loaf pan and remove bread from pan.
