Recipe: Triple Chocolate Mess for the Crock Pot

One of the things I’m enjoying about the crock pot e-mail my sister-in-law sent to me is that I’m learning how to cook things in my crock pot that I would have never considered cooking in A CROCK POT. And, with Super Bowl Sunday approaching – I started looking through the list and there are several things on the list that would be great for a party. I’m going to make this recipe because everyone in my family loves chocolate and this will be easy and I won’t have to turn on the oven to make it. AND, no fuss, no muss, mix, pour, set it and forget it recipe! Well – it may actually fall under a humdinger category (if I had one).

This is wonderful for “chocoholics” like me.

1 pkg. chocolate cake mix
1 pt. sour cream
1 pkg. instant chocolate pudding
1 sm. bag chocolate chips
¾ c. oil
4 eggs
1 c. water

Spray crock pot with non-stick spray. Mix all ingredients. Pour into crock pot. Cook on low for 6-9 hours. Serve in a bowl with ice cream.

Recipe: Sick of being hot? Try this ice cream dessert

It is about this time of the summer that I start my daily whine at 4:00 AM with a hot flash and turning the A/C down and then I freeze my coffee so I have cold coffee or tea in the morning.  I probably have saved the Popsicle company from any financial trouble.  Those freeze pop stix are coming in a close second.  I just wish they made them in margarita flavors (with the tequila).  Let’s put it this way, I’m about to start putting my underwear in the freezer before wearing it.  Don’t laugh!  Have you ever had a hot flash? In July? 

So , in effort to help make the world a cooler place (both physically and emotionally), I’m sharing Miss Dee’ Ice Cream Dessert.  I don’t remember who Miss Dee is, but it is another handwritten recipe from my mother’s “Favorite Cakes, Deserts, Pie and Cookies” notebook she wrote for me back in 1981.  So here goes………make a batch and watch the smiles begin.  This is a great recipe to make with kids.

Miss Dee’s Ice Cream Dessert

12 oz. vanilla wafers, crushed
3 tablespoons melted margarine

Mix and press into a 9 x 12 x 12 pan.  Reserve 1/4 of the mixture for later.

Melt:  2 square of semi-sweet dark chocolate and 1/2 cup margarine

Cool and add:  3 egg yolks,  2 cups powered sugar and 1 teaspoon vanilla

Fold in:  1/2 cup chopped almonds and 3 beaten egg whites

Pour over crumb base and freeze until firm.

Soften 1/2 gallon Chocolate Almond Ice Cream and spread over frozen mixture.  Sprinkle with reserved crumbs, cover with foil and return to the freezer.

To serve, cut into squares, top with whipped cream and chocolate curls or sprinkles.

Recipe: Grandma’s Ice Cream

My Goodness!  I didn’t realize I had not shared this summer favorite on my BLOG.  Our family uses this recipe for plain old VERY rich vanilla ice cream, and we also add fresh fruit to it.  My favorite (or course) is peach.  It is great for making banana ice cream, strawberry ice cream, blueberry ice cream, or coconut ice cream.  (Listen, to me!  I sound like Bubba from Forrest Gump).  If you make coconut ice cream, I would use coconut milk instead of condensed milk and then add fresh coconut.  I hope you enjoy this basic ice cream base.  It is one of my treasured recipes from my father’s mother.

Grandma’s Ice Cream

6 Eggs
2 cans condensed milk
1 cup sugar
5 tablespoons vanilla flavoring (extract)
whole milk (this is really important that you use WHOLE milk)

Beat eggs until thick and light colored.  Beat in sugar and condensed milk.  Add vanilla and enough milk to fill can to fill line.  Freeze in crank type ice cream freezer until hardened.  Fresh peaches, bananas, blueberries, or strawberries, which have been crushed or sliced into small bites, can be added BEFORE filling to the fill line with milk.  Makes 1 1/2 gallons. 

I also have a wonderful recipe (somewhere) for my grandmother’s Orange Crush Ice Cream.  I’ll post it as soon as I find it.  Kids love it!
