Recipe: Spinach Artichoke Dip – Crock Pot

I know! I know! I’ve not posted anything in a while and all I can say to that is – I needed a break. Now, I’m back. Yep – it is that simple. You know how it is. A day goes by here and there and all of a sudden two weeks have flown by in the new year. The old virtual crickets noise was getting really loud here at Something’s Burning. Sorry about that. And, to get back into the swing of things – here is a recipe for the upcoming NFL playoff and Super Bowl Sunday parties you are planning. It is really easy because you throw it all in the crock pot, stir it, turn it on, and walk away. Ya gotta love that!

Crock Pot Spinach Artichoke Dip

4 (6 oz) cans artichoke hearts, chopped and drained
2 cups grated Parmesan cheese
4 oz. chopped green chilies
1 1/3 cup mayonnaise
1 1/3 cup sour cream
16 oz. jar salsa
2 (10 oz.) packages frozen chopped spinach (thawed)

Cook in crock pot on High 1 to 2 hours. Serve with vegetables or tortilla chips or pita chips.

Christi’s Corn Dip

We had a little get together last Friday for a co-worker’s birthday and I wigged out over this dip. I’m putting this on my Super Bowl game day menu. It is that good!

Christi’s Corn Dip

2 big cans Mexican corn – drained
1 8 oz. cream cheese package – softened
Small jar pimentos – drained
1 cup mayo
1 cup shredded cheese – mixed
Green onion tops
1 tsp accent
½ teaspoon salt
Small jar of diced jalapeno peppers diced

Mix all together. Will be runny at first. Will set once chilled.

Recipe: Broccoli Dip

I could BLOG about McCain and Palin vs. Obama and Biden, but you know what – to heck with those guys.  I’m going to BLOG about something really important.  Broccoli Dip!  Warm, Cheesy, DELICIOUS Broccoli Dip.  The perfect running mate for corn chips.  And, I think Broccoli Dip is actually on the independent ticket – so everyone enjoy!

Broccoli Dip

2 small packages froze broccoli cooked, chopped and drained
1 roll Kraft garlic cheese
1 can cream of mushroom soup
Dash or two of Worcestershire Sauce
Tabasco Sauce to taste

Mix, heat and serve in a chafing dish with corn chips for dipping.
