Recipe: Spinach Artichoke Dip – Crock Pot

I know! I know! I’ve not posted anything in a while and all I can say to that is – I needed a break. Now, I’m back. Yep – it is that simple. You know how it is. A day goes by here and there and all of a sudden two weeks have flown by in the new year. The old virtual crickets noise was getting really loud here at Something’s Burning. Sorry about that. And, to get back into the swing of things – here is a recipe for the upcoming NFL playoff and Super Bowl Sunday parties you are planning. It is really easy because you throw it all in the crock pot, stir it, turn it on, and walk away. Ya gotta love that!

Crock Pot Spinach Artichoke Dip

4 (6 oz) cans artichoke hearts, chopped and drained
2 cups grated Parmesan cheese
4 oz. chopped green chilies
1 1/3 cup mayonnaise
1 1/3 cup sour cream
16 oz. jar salsa
2 (10 oz.) packages frozen chopped spinach (thawed)

Cook in crock pot on High 1 to 2 hours. Serve with vegetables or tortilla chips or pita chips.

Recipe: Snickerdoodles

Good Old Fashioned Snickerdoodles. Nothin’ like ‘em. Nope. Nadda. Nothin’! Cinnamon. Sugar, Butter. All the major ingredients for holiday cookie swapping parties, gifts for the teacher, neighbor, or guy who mows your lawn. Yep. I haven’t met anyone yet that doesn’t like this cookie. Speaking of cookies – are you going to a cookie swap this year? Do people still do that? I haven’t been to one in years. But, you can bet on it – this recipe would be included.

Snickerdoodles

2 3/4 cup sifted flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup soft butter
1 3/4 cups sugar
2 eggs
4 teaspoons cinnamon
1/4 cup sugar

Sift flour, baking powder and salt together. Cream butter, adding the 1 3/4 cup sugar gradually until light and fluffy. Blend in the eggs. Add dry ingredients, mixing well. Chill dough. Combine the 1/4 cup sugar and the 4 teaspoons cinnamon. Roll a one inch size ball of dough in the sugar/cinnamon mixture and place on an ungreased cookie sheet about 2 inches apart. Bake at 400 degrees for 10 minutes. Cool and enjoy. Makes 5 dozen cookies.

Recipe: Date-Nut Balls

Well – Christmas is almost here!  Where does the time go?  I shopped all day Saturday and Sunday.  My calves are still killing me.  It may take until after the New Year to recover.  The other thing I still need to work on: the food.  The goodies.  Everyone wants goodies. Right? Right.

Here’s another quick and easy recipe.  I personally do not like the ‘roll in coconut’ part of this recipe and I use powdered sugar instead, but for those who love coconut – go for it.

Date-Nut Balls

1 egg, well beaten
1 cup sugar
1/2 cup margarine or butter
1/4 teaspoon salt
1 8 oz. package chopped dates
2 cups Rice Krispies
1/4 cup chopped pecans
Flaked coconut

Mix egg, sugar, margarine, salt and dates in a saucepan; cook, stirring frequently, until dates are soft and mixture is thick.  Place saucepan in ice water until mixture is cool enough to handle.  Add Rice Krispies and nuts; mix quickly.  Shape into small balls with buttered hands.  Roll each ball in coconut.  Or powdered sugar if you do not care for coconut.
