Recipe: Date-Nut Balls

Well – Christmas is almost here!  Where does the time go?  I shopped all day Saturday and Sunday.  My calves are still killing me.  It may take until after the New Year to recover.  The other thing I still need to work on: the food.  The goodies.  Everyone wants goodies. Right? Right.

Here’s another quick and easy recipe.  I personally do not like the ‘roll in coconut’ part of this recipe and I use powdered sugar instead, but for those who love coconut – go for it.

Date-Nut Balls

1 egg, well beaten
1 cup sugar
1/2 cup margarine or butter
1/4 teaspoon salt
1 8 oz. package chopped dates
2 cups Rice Krispies
1/4 cup chopped pecans
Flaked coconut

Mix egg, sugar, margarine, salt and dates in a saucepan; cook, stirring frequently, until dates are soft and mixture is thick.  Place saucepan in ice water until mixture is cool enough to handle.  Add Rice Krispies and nuts; mix quickly.  Shape into small balls with buttered hands.  Roll each ball in coconut.  Or powdered sugar if you do not care for coconut.

Recipe: Brandy Balls

Here’s a holiday “Adult” treat for the party animals out there. Brandy Balls! Luscious little bites of bourbon flavored wonderfulness that makes men weak in the knees. Even those good little Baptist boys who’d never dream of letting bourbon or brandy past their lips. :) They are so easy to make and the best part, NO OVEN REQUIRED! So, if you have a bourbon or brandy lover in the family, these are the perfect little homemade treat or gift that is sure to please. Get out your hidden bottle of bourbon or brandy and let’s make some Brandy Balls!

Brandy Balls

1 large package vanilla wafers (30 to 36 cookies) – grind them in a food processor or do the old bag and bang with a rolling pin. You need crumbs like graham cracker crumbs.
1 1/2 Tablespoon Cocoa
2 Tablespoon Karo Syrup (white)
1 cup powdered sugar
1 cup chopped pecans
8 Tablespoons Bourbon (or Brandy if you like)
*powdered sugar

Mix all ingredients and form into balls about one inch in diameter. Roll in powdered sugar and place in tightly sealed canister.
