Recipe: Apple Crisp

You know how it goes. There’s always a guest or two who, for one reason or another, doesn’t like the dessert or they’re allergic to something in the dessert. There you are, the hostess without the most-est. And, for whatever reason, you ran out of time to make another dessert. After all, you were cooking turkey, dressing, your grandmother’s green bean casserole recipe, and the sweet potatoes. Oh yeah! Been there. Done that. Not to worry. Make this recipe. Quick. Easy. Warm. Ooey-gooey apple and cinnamon Da-Lish-C-ocity. Especially with a scoop of vanilla ice cream on top, which you probably had some anyway to go on top of the pecan pie.

Apple Crisp

4 apples, peel, core and slice
1/2 cup water
2/3 cup flour
3/4 tsp. cinnamon
2/3 cup sugar
1/2 stick butter

Butter the baking dish and place apples in the dish. Sprinkle with cinnamon. Blen flour, sugar, butter and water together to form crumb mixture. Spread over apples and bake 25 to 30 minutes at 350 degrees.

(Mimi’s note at the bottom of the page in ‘the book’: Peaches may be substituted in this recipe for the apples. Use 1/2 tsp. cinnamon and 1/4 tsp nutmeg when using peaches.)

Recipe: Sour Cream Pound Cake

Why is it named ‘Pound’ Cake? Does it weigh a pound? Does it require a pound of ingredients to make it? Or is it because it make you gain a pound after eating it? Honestly, I have no idea why this cake is called ‘Pound’ cake. But, I do know how good it is to eat. Moist and yummy! (My husband likes it for breakfast.)

Sour Cream Pound Cake

1 box white cake mix
1/2 cup sugar
3/4 cup veg. oil
1 cup sour cream
4 eggs
2 teaspoons cinnamon
3 Tablespoons brown sugar
1/2 cup chopped pecans

Grease and flour tube cake pan or bundt pan. Mix cinnamon, brown sugar, and pecans. Set aside. Combine cake mix, sugar, oil, and sour cream. Add eggs one at a time – beating well after each one. Pour half the batter into pan and sprinkle half the cinnamon sugar on the cake mix. Add the remaining batter and sprinkle the rest of the cinnamon sugar on top. Bake for 1 hours @ 350 degrees. Cool 10 minutes in pan. Remove from pan. Pour glaze over cake.

Glaze: 1 cup powdered sugar, 2 Tbsp. milk, 1/2 teaspoon vanilla. Whisk together until smooth.

Recipe: Rum Cake

I do not recall my mother making this cake except during the holiday season. Mrs. Beal, who moved to Arkansas from Texas about the same time we moved from Louisiana, was one of our neighbors and she shared the recipe with my mother. My sister and their oldest daughter are still very good friends to this day. Every time I make this cake of think of the Beal family. I hope they are all doing well. Hey! Mrs. Beal – thanks for the recipe. It is yummy! And, it isn’t a ‘knock youdown with rum flavor’. Just hint. Just a smidge. Just a whisper of rum flavor. Rum! Mmmmm, I bet Captain Jack Sparrow would love it.

Jack Sparrow: [Wakes up and sees Elizabeth burning the rum] No! Not good! Stop! Not good! What are you doing? You burned all the food, the shade… the rum!
Elizabeth: Yes, the rum is gone.
Jack Sparrow: Why is the rum gone?
Elizabeth: One: because it is a *vile* drink that turns even the most respectable men into complete scoundrels. Two: that signal is over a thousand feet high. The entire royal navy is out looking for me, do you think there is even the slightest chance they wont see it?
Jack Sparrow: But why is the rum gone?

Mrs. Beal’s Rum Cake

4 eggs
1/2 cup sugar
1 8 oz. carton sour cream
3/4 cup veg. oil
1 package Butter Cake mix
1 tsp. rum flavoring
1 tsp. coconut flavoring

Mix and bake in greased and floured bundt pan at 325 degrees for 50 to 60 minutes. Cool and frost.

Frosting:
1 stick butter (melted)
3 Tablespoons white Karo syrup
1/4 cup evaporated milk
Mix the 3 ingredients above and boil 3 minutes being careful not to burn.

1 tsp. rum flavoring
1 teasp. coconut flavoring
3 1/2 cups powdered sugar
Add to the Butter and Karo mixture. Beat until smooth.

And, did you know Johnny Depp (aka Captain Jack Sparrow) was named People Magazine’s Sexiest Man Alive? Really? Don’t get me wrong. I like Johnny Depp, but I’m more of a Cary Grant kind of fan. But, then again, he isn’t with us – so I guess Johnny will do.
