Recipe: Pecan Tassies

These are just so stinkin’ easy to make and really cute! Mini-pecan pie bites. A.K.A. Pecan Tassies. Put this on your ‘make for Christmas’ cookie list. Three words: To. Die. For.
Pecan Tassies
1 (3 oz.) package of cream cheese, softened to room temperature
1/2 cup butter, softened to room temperature
1 cup sifted flour
1 egg
3/4 cup brown sugar
1 Tablespoon butter, softened to room temperature
1 teaspoon vanilla
1/4 teaspoon salt
1 cup chopped pecans
Blend cream cheese and the 1/2 cup of butter. Mix in flour and chill for one hour. Shape into 24 small balls. Place one ball in each cup of miniature (1 3/4″) muffin tins. Press dough against sides and bottom of pan to form cup. Sprinkle pecans in each cup. Beat other ingredients together and spoon over pecans in cups. Top with additional pecans. Bake at 325 degrees for 25 minutes. Cool and remove from pans.
