Recipe: Mem’s Green Pepper Steak

This little diddy is one of my mother-in-law’s recipes. I make this often during the summer months because it is easy, delicious and I can cook it in a skillet on my stove top. Dinner in 30 minutes! I promise.
Mem’s Green Pepper Steak
1 to 1 1/2 pounds round steak – trimmed and sliced into thin strips
1 large green bell pepper
1 large onion
1/2 cup Soy Sauce
2 cups water
2 teaspoons corn starch
Cut steak into thin, bite-sized strips. Chop onion and brown with steak in skillet using EVOO or vegetable oil (2 to 3 tablespoons). Season with a little (very little) salt and some black pepper.
After the steak is browned and onions are tender, add two cups water and 1/2 cup soy sauce. Stir and cover. Simmer for about 20 minutes. Slice the green bell pepper into thin strips and add to the skillet. Cover and simmer for 10 more minutes. Just before serving, mix the 2 teaspoons of corn starch with 1/2 cup cold water. Stir into the skillet to thicken the sauce. Sever over hot rice. Easy Schmeezy!
