Recipe: Quick and Easy Cobbler

Blackberries, raspberries, blueberries.  Oh My!  Summer berries are plentiful this year thanks to all the spring rain and they are so juicy and delicious.  This little recipe appears in a family cook book in the quick and easy section.  I tend to like any recipe that starts with the words quick and easy.   So – next time company drops in, crank out this cobbler and serve with a little whipped cream or vanilla ice cream.  And, don’t be surprised if your guests keeping dropping on in to see you.  :)

Quick and Easy Cobbler

1/2 cup butter (1 stick, melted) – set aside

Mix together:
1 cup self rising flour
1 cup sugar
1 cup milk

Add the melted butter.  Butter the bottom of a baking dish and pour in the batter.  Scatter the berries on top and then sprinkle with 1/4 cup sugar.  Bake at 350 degrees for one hour.  Serve with whipped cream or vanilla ice cream.

  1. OMG! I’ve been craving cobbler lately and even have plans to go to the Farmer’s Market Saturday morning to find some fresh berries. Now I really can’t wait!
