With our power restored and a hot shower, I felt renewed and decided to yet again try another recipe from the gargantuan list of crock pot recipes sent to me by my sweet sister-on-law. This one was very manly. Beef, beans, onions, and potatoes. Can you feel the testosterone flowing? Yep! And, they loved it. It was pretty good and I’ll be making it again sometime. I think I need to add some more ingredients like corn or peppers. Anyway, give it a try on a cold winter’s day. Hits this spot!
Cowboy Casserole

ground chuck, browned and drained |

potatoes, sliced |

red beans |

tomatoes mixed with 2 tbsp. flour or 1 can tomato soup |

salt, pepper and garlic to taste |
Put chopped onion in the bottom of the crock pot; layer with browned ground beef, sliced potatoes, and beans. Spread tomatoes or soup over all. Sprinkle with seasonings as desired. Cover and cook on low for 7 to 9 hours.
Serves 4 to 6 people

Personally, I don’t mind winter. But, I am pretty much sick of it by the time March rolls around. It is still January, so I know that according to nature – it is suppose to be cold. I can handle the cold when it is suppose to be cold. Conversely, my husband feels like a trapped animal and paces back and forth in front of the windows. Looking outside, sighing and pouting. He loves to fish and when it is cold, he can’t fish. Well – not comfortably and as often as he’d like to fish. So, I try to find other things to do and make meals he finds comforting during the cold winter months. Today we’ll probably take a drive and check out a state park or something. I’m cooking a chicken to make King Ranch Chicken for tonight’s dinner. Kids are coming over so maybe that will help him get over his mid-winter funkiness. He needs a hobby……….other than fishing.
I found this recipe in the big list of crock pot recipes and it is one of fishing crazed hubster’s favorite soups. Corn Chowder! And, it is budget friendly too. I’ll be making this later in the week. Hope y’all are staying warm out there and if you live some place where it is above 60 degrees, will you adopt a 51 year old kid until March? No? oh well.
Crock Pot Corn Chowder
6 slices bacon
2 pkgs. frozen corn (10 oz. each)
1 can cream style corn (16 oz.)
1 tbsp. Worcestershire sauce
2 c. water
½ c. onion, chopped
2 c. potatoes, diced
1 tbsp. sugar
1 tbsp. seasoned salt
1 can chicken broth (16 oz.)
1 c. milk
¼ c. butter
In skillet, fry bacon until crisp, remove and reserve. Add onion and potatoes to bacon drippings, saute for 5 minutes. Combine everything in crock pot except butter and milk. Cover and cook on low for 7 hours. Pour ½ of the mixture into blender and puree until almost smooth. Return to crock pot with milk and butter. Cover and cook on high one hour more. 6 to 8 servings.

Here’s a new one that I’ve never made before and I’m heading to the Wal-Mart’s here shortly to purchase groceries for the week. I’m going to make this tonight. Thought I’d share it with you because it really sounds good and on a cold day like today – it REALLY sounds good. Also, I think it probably falls under the “good for you” category. May qualify for some diets.
Cabbage Soup
2 tablespoons extra-virgin olive oil
1/2 pound ham steak, chopped
1 savoy cabbage, quartered, cored and shredded
1 onion, quartered and thinly sliced
1 cup shredded carrots
2 cups frozen shredded hash brown potatoes
Salt and pepper
1 bay leaf, fresh or dried
2 cups cider
1/4 cup honey
1 (14 ounce) can white beans, drained
1 pound bag sauerkraut, rinsed and drained
1 quart chicken stock
1/4 cup chopped dill
1 cup sour cream, to pass at table (optional)
Heat a soup pot over medium high heat with extra-virgin olive oil.
Add ham and lightly brown 2 to 3 minutes. Add shredded cabbage
and stir in the onions and carrots as you finish chopping and grating
them. Stir in the frozen hash browns and season the vegetables
liberally with salt and pepper. Add in a bay leaf, cider, honey, beans,
sauerkraut and chicken stock. Place a lid on the pot and bring soup to
a boil. Uncover and simmer 10 minutes until vegetables are tender.
Stir in dill and adjust seasoning of soup. Serve the soup in shallow
bowls and top with sour cream
Update: I made this and I loved it. Kind of sweet and sour soup. Here’s a photo!
