Recipe: Mississippi Mud Cake

Remember Goo Goo Clusters? Chocolaty, nutty, marshmallowy spooginess! Well – that’s what this cake tastes like. This is really rich and roll your eyes into the back of your head good.
Mississippi Mud Cake
2 sticks butter
1/2 cup cocoa
2 cups sugar
4 eggs, slightly beaten
1 1/2 cups flour
1 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon vanilla
1 1/2 cups chopped pecans
Miniature Marshmallows
Melt butter and cocoa together in a saucepan. Remove from heat and stir in sugar and beaten eggs. Mix well. Add flour, baking powder and salt which have been sifted together. Add vanilla and nuts. Mix thoroughly. Pour into greased 9 x 13 x 2 pan and bake at 350 degrees for 35 to 40 minutes. Sprinkle with marshmallows while warm and cover with frosting.
Frosting
1 box powdered sugar
1/2 cup milk
1/3 cup cocoa
1/2 stick butter
Combine sugar, milk, cocoa and butter. Mix thoroughly and spread over marshmallow topped cake.
