Recipe: Sweet Potato Pie

I hate pumpkin pie. As far as I’m concerned, pumpkins are good for one thing. Jack-O-lanterns! So, what’s a girl to do when everyone one likes a fall tasting pie – well – you can make good old southern sweet potato pie, that’s what!
I love this stuff!
Mimi’s Sweet Potato Pie
4 medium sweet potatoes, boiled and peeled
1/2 cup butter
1 1/2 cups sugar
3 eggs
1 cup milk
1/2 teaspoon baking powder
1 teaspoon vanilla
2 teaspoons ground cinnamon
dash of salt
Mix well in an electric miser. May add a little more milk if needed. Bake in two unbaked 9 inch pie shells for 10 minutes at 450 degrees. Lower temperature to 325 and continue baking for and addtional 50 minutes.
