Recipe: Sweet Potato Casserole

Just a quick recipe for another family favorite.  Perfect for fall holiday dinners. 

Sweet Potato Casserole

5 medium sweet potatoes, boiled, peeled, mashed
1/4 teaspoon salt
1/4 cup butter
2 eggs
1 teaspoon vanilla
1 1/2 teaspoons ground cinnamon
1 cup sugar or more

Mix well and place in a large casserole dish.

Make a topping of:

1/4 cup melted butter
3 tablespoons flour
3/4 cup brown sugar
1/2 cup chopped pecans

Mix and spread over the potatoes.  Bake at 350 degrees for 30 minutes.

    I made something similar to this last year at Thanksgiving and I thought it was delicious and different. all I got was comments on “where’s the marshmallows” go figure.. : S
