Recipe: Island Sweet & Sour Meatballs and Post Its!

I believe I’ve mentioned My Three Brothers, Joel, Mark, and Rusty. And, I believe I’ve mentioned how wonderful a cook my mother is….hmmmm, hmmm, hmmm. Well, my mother is a living saint – truth be told. She had five (count them – 5!) babies in seven years and three of them were boys. My brothers were famous around the neighborhood for a lot of things. Things we can’t chat about on my BLOG as I like to keep it family friendly, but the one thing I can discuss is their ability to eat. My brothers can eat……… a lot………a bunch………a heap of food. Let’s put it this way, they’ve been asked to leave buffet style restaurants and asked to never come back because the buffet cooks couldn’t keep up. Honest! True story!
Anyway, I really don’t know how my parents afforded food having three growing teenage boys in the house. They ate everything the minute she brought it home. One time, she had prepared two large trays of cooked chicken for a dinner party she was having and they wiped it out when they came home from school. One of my brothers’ most favorite meal is Mom’s Sweet and Sour Meatballs. They wiped those out one time and we had to go out to dinner because there was nothing left to eat. (we lived 8 miles out of town on a dirt road – Daddy was not a happy camper). Anyway, my saintly mother was just about at the end of her rope when the greatest little invention ever showed up at the local store. Post Its! Yep! The one thing my brothers would not do was ignore my mother’s wishes if it were in plain site to read whether it was a list of chores or requests to please not wipe out the refrigerator full of food. And, in order to save the family meals from being ravaged everyday after school, Mom took to sticking Post Its on the food in the frig! DON’T EAT THIS! was posted on pre-made dinners and other things she did not want them to touch. I recall this so clearly because Post Its first appeared on top of the pot containing the Sweet and Sour Meatballs. So remember, when raising teenagers, buy Post Its for your frig and let’s make my Mom’s Sweet and Sour Meatballs, shall we.
Mimi’s Sweet and Sour Meatballs
1 egg, slightly beaten
1 cup soft bread crumbs
2 tablespoons chopped onions
2 tablespoons milk
3/4 teaspoons salt
2 pounds lean ground beef
Sauce (recipe below)
Mix and shape into small meatballs using one tablespoon of mixture for each meatball. Brown in a large skillet in a little hot shortening. Drain off fat. Make sauce. (Now ladies – I’ve been known to cheat and purchase the pre-made meatballs from the local Wal-Marts. Honestly! They taste the same – so unless you like making meatballs from scratch, save yourself the trouble and buy the frozen ones. Thaw, brown, make sauce. I like keeping it simple. It’ll be our little secret – just don’t tell Mom!)
1 small can pineapple chunks
1 cup whole berry cranberry sauce
1/2 cup barbeque sauce
1 tablespoon cornstarch mixed with 1/4 cup cold water
1/4 teaspoon salt and dash of pepper
1/2 cup green pepper strips (optional)
Drain pineapple and reserve the syrup. Set pineapple aside. Add water to the reserved syrup to make 3/4 cup of liquid. Mix cranberry sauce, barbeque sauce, salt and pepper with the syrup mixture and pour over the meatballs in skillet. Bring to boiling point and reduce heat. Cover and simmer 15 to 20 minutes. Stir cornstarch/water mixture slowly into skillet. Cook and stir until thick and bubbly. Add pineapple chunks and green pepper strips. Simmer, covered, until pepper is barely tender. Serve over hot, cooked rice.

NOTE: If Dale, (my Dad), Joel, Mark or Rusty are your guests, be sure to double the recipe. If more than two of them are there, forget it, you don’t have a pot that big!
