Recipe: Easy Pork Chops with Apple Dressing

Leave it to my mother to find another great recipe. She sent this one to me Monday night through e-mail. My sister-in-law, Vena, made it over the weekend and Mom made it Monday. They both loved it. I’m making it tonight. It sounds good. Here’s Mom’s e-mailed recipe:
The recipe for the pork chop dish that I told you about is:
1 (21 oz. can) apple pie filling
6 boneless pork chops (3/4 inch thick)
1 package Chicken Flavor Stuffing Mix
Heat oven to 375 degrees. Spray an oblong Pyrex baking dish 9X12 with Pam. Spread pie filling over bottom of dish. Lay the pork chops over the top of the apples and season with salt and pepper or other seasonings as you choose. Mix the stuffing mix according to the package directions and spread it over the pork chops. Cover dish with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
Serve hot with a salad or vegetable and, voila, you’ve got a meal. Yummy and so easy.

What a wonderful and easy meal for a cool night. I love pork chops, and no one else in this house will eat them. I could potentially eat all of this, though. *sigh*
