This dish combines some of my favorite ingredients. Honey, butter, and curry! My Nanaw (maternal grandmother) made this dish quite often and is another family favorite. I hope you enjoy it.
Nanaw’s Honeyed Chicken
1/4 cup butter
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry
3 pounds chicken, cut-up
heat oven to 375 degrees (350 for a glass dish). Melt butter in 3 quart baking dish. Stir in honey, mustard, salt, pepper (to taste) and curry until well blended. Roll chicken pieces in mixture and arrange in a single layer in baking dish. Bake for 1 hour or until tender.

You know those days when you’re going through every cabinet in your house looking for a chocolate “fix”. Well – I have it! Chocolaty No-Bake Cookies – (swooning). These thing are as addictive as George Clooney’s smile. And, the great part…………..no fuss, no muss, one pan and simple ingredients. So, the next time hormone hell has arrived, or you’re resisting the urge to PSM rant, whip up a batch of these cookies. You won’t regret it. I should also mention they never make it to the solidified stage when I make them because I grab a spoon, a cold glass of milk and eat them ooey-gooey and warm. I highly recommend it!
No Bake Cookies
2 cups sugar
1/4 cup cocoa
1 stick margarine
1/2 cup milk
Mix in a saucepan and boil for one minute. Stir constantly.
Add: 1/2 cup peanut butter, 1 teaspoon vanilla, 3 cups quick-cooking oatmeal
Mix well and drop by spoonful onto waxed paper. Cool (on counter in winter or in the refrigerator). (Chopped nuts or coconut may be added if desired). I prefer them plain.

Yes, Beets! This is the only way I will eat beets. My grandmother made them every year and I would eat them by the jar full. Not just the little Mason Jars. NO! The BIG Mason Jars. Oh, sure you can buy a little small jar of pickled baby beets at the grocery store, but they do not compare to this recipe. So, if you’re growing some beets and don’t know what to do with them, give this recipe a try. It’sa good ‘un!
Nanaw’s Pickled Beets
Use cooked and sliced beets placed in Mason Jars. Mix together 2 cups sugar, 1 tablespoon cinnamon, 1 tablespoon allspice, 1 teaspoon salt, 3 1/2 cups vinegar and 1 1/2 cups water. Bring to boiling point before putting over beets. Can be sealed or kept in refrigerator.
