Recipe: Eden Isle Chicken

This is one of my Nanaw’s recipes. I do not know where or from whom the recipe originated, but it is named after Eden Isle, Louisiana , a small community on the north shore of Lake Pontchartrain. With all that history, I think it is fair to say this is a Southern Dish! It is wonderful, tasty, and oh so good for when “comp-nee” comes over to da house.

Eden Isle Chicken
1 Jar dried beef (you can find this usually by the canned meats)
12 chicken breasts, skinned and boneless
1 1/2 cups sour cream
12 half slices of bacon
3 oz. cream cheese
2 cans cream of chicken soup
Layer dried beef in the bottom of a large flat baking dish. Place chicken breasts on top of beef. Place 1/2 slice of bacon on each chicken breast. Mix sour cream, cream cheese, and soup and pour over chicken. Cover dish with foil and bake 2 1/2 hours at 325 degrees. Remove foil and bake 30 minutes longer. Serve over 4 cups cooked rice.

That sounds sooo good!!!
I may make it sunday as the kids will be home for lunch. Do you think it will go good with Herbed Rice Pilaf and steamed green beans?

I personally love herbed rice with chicken no matter how the chicken is prepared. I love me some green beans too! I hope your family enjoys the dish.
