First of all, I would like to apologize for overlooking this recipe. I don’t know what I was thinking because it is oh so yummy and good for you too! Not to mention one of those mix, stir, bake so easy it is to die for kind of recipes. I hope ya’ll enjoy it!
Mimi’s Raisin Oatmeal Bread
3/4 cup whole wheat flour
3/4 cup white flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup brown sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup quick cooking oatmeal
1 egg, well beaten
2 tablespoons, vegetable oil
1/2 cup orange juice
1/2 cup water
1 cup raisins
1 cup pecans, chopped
Stir dry ingredients together. Add oatmeal, eggs and oil. Stir to mix. Add remaining ingredients and stir to moisten. Pour into a greased loaf pan. Bake at 375 degrees for 50 to 60 minutes. Glaze with 1/4 cup water, 1 tablespoon orange peel (grated) and a little orange juice mixed together.
Ya’ll enjoy!
