Recipe: Good Old Southern English Pea Salad

We’ll get right to the recipe this morning.  I’m a little sleep deprived as the new Batman “The Dark Knight” movie was really long and I didn’t get in bed until after 11:00 PM.  I know.  I’m a whimp.  So, here’s a recipe every southern girl should know how to make. 

Mimi’s English Pea Salad

1 large can English peas, drain the liquid
1/4 cup sweet pickle relish
1 small onion, finely chopped
2 hard boiled eggs, sliced
1/2 cup Miracle Whip salad dressing. 

Mix well and chill.  Serve on a lettuce leaf.
