Recipe: Fresh Strawberry Pie

This pie is the kind of pie your granny use to make for Sunday dinner. I just love pie! Especially any cold pie for the hot summer months. Once again, this is a recipe from that notebook my mother wrote in long hand form for me just before I got married. God Bless Her! Because………I couldn’t boil water dry out of the pot when I got married. Luckily, I can read directions!
Mimi’s Strawberry Pie
1 quart fresh strawberries, washed and stemmed
1 cup sugar
4 tablespoons cornstarch
1/4 teaspoon salt
1 cup water
1/2 pint whipping cream
sugar
baked pie shell
Crush half of the berries and add the 1 cup of sugar, cornstarch, salt and water. Cook over low heat or in a double boiler until thick and clear. Stir constantly. cut remaining berries in half and place in the baked pie shell. Pour cooled glaze over berries. Whip the whipping cream with a little sugar to sweeten it and spread over top of pie. Refrigerate for a couple of hours.
