Recipe: Easy Breakfast Casserole

Company comin’ over for the weekend? Need an easy recipe for a breakfast dish that feeds several folks? Here ya go! Prepare the night before, wake up and shuffle to the kitchen, throw it in the oven and 30 minutes later – Viola! You’re the queen of the castle. I serve with sweet rolls, fruit, juice, milk and coffee. Sometimes I make cheese grits for a side dish. Ya’ll enjoy!
8 Eggs, slightly beaten
1 lb. sausage, cooked and crumbled (or you can substitute bacon, but I like mixing 1/2 regular and 1/2 hot sausage)
1 Cup cheddar cheese, grated
6 slices bread, cubed
2 Cups milk
¼ tsp Worcestershire sauce
1 tsp salt
1 tsp dry mustard
Mix all ingredients and place in buttered casserole dish. Refrigerate overnight. Bake at 350° for 30 to 35 minutes and serve.

I’ve made a different variation on this before – used bacon, can of ortega green chiles (mild), (instead of bread)6 corn tortillas (torn into bite-size pieces), can of Green Giant corn niblets. If you like it spicier, you can add in a handful of finely chopped serrano peppers. You still let the whole thing soak overnight then back as usual. I reserved some bacon and sprinkled it on top before serving. You can serve this with salsa or homemade pico de gallo. SO GOOD!
