Aunt Mary’s Strawberry Cake

My Aunt Mary was my father’s sister. She was very tall…..man! that woman was tall. She had six children; Danny, Debbie, Doran, Dorothy, Darrell and Denise. Needless to say, she was a busy woman. I don’t remember her working outside the home, but her husband, Uncle Alton, was a Louisiana State Trooper and from time to time he served as “protection” for various governors. Uncle Alton acquired this recipe from the chef for Governor Jimmy Davis. It is one of the richest strawberry cakes I’ve ever tasted. Strawberries will soon be in season. So grab yourself some strawberries and make this dessert. It is WONDERFUL!
1 package yellow cake mix
1 package strawberry Jello
1/2 cup water
1/2 cup Wesson (or vegetable) oil
3/4 cup crushed strawberries & juice
4 eggs (separated)
Sift cake mix and dry jello together. Add oil and water. Add strawberries and egg yolks. Mix well. Beat egg whites until stiff and fold gently into batter. Line (3) (this is a tall cake) 9″ pans with waxed paper, then grease and flour. Pour in batter and bake at 350 degrees for 40 minutes. Remove to racks and cool 10 minutes. Remove layers from pans, cool and frost.
Frosting:
1 box powdered sugar
1/2 stick butter (softened)
1/2 cup crushed strawberries
Mix together and frost cake
